I still don’t quite know how Volland pulls it off, but it’s one 45-minute miracle after another: cod with warm beet, sour cream and dill sauce; tamarind-glazed chicken heaped with fresh mint and cilantro; lamb chops with pomegranate reduction and spiced yogurt drizzle. Despite the title (ironically, the word “inspire” in a cookbook title consistently uninspires me), it’s my favorite book this year – and it just might be yours, too."
