True to form, Molly Stevens offers the completely basic (“Simplest Tossed Green Salad”) right alongside the unexpected and charming ("Celery Salad with Apricots and Candied Almonds”). As the title suggests, expert tips abound here – “Salt early and salt often!” – in sidebars, headnotes, essays.
